Abstract

ABSTRACT Kidney beans purchased from Sokoto central market was studied for its proximate composition and phytochemical propertied. 7g of red kidney beans was washedair-dried at room temperature and then grinded into powder. The powder wassubjected to the proximate and phytochemical screening using standardized methods. Proximate analysis revealed highest content of carbohydrate with 51.4%, followedby crude protein, moisture, crude fiber and ash having 25.56% 8.00, 7.00 and 4.00% respectively. Low content of lipid was reported as 3.2%. The phytochemical screening shows concentration of phytochemical as Saponin>Flavonoid>Tannins>alkaloid>glycoside in order of decreasing content ration. The appreciable amount of carbohydrate, protein and presence of phytochemicals.
