Abstract

ABSTRACT This study was done with the intent of estimating and determining the protein content in the seed of Moringa oleifera. Extraction was done with a phosphate buffer. The determination was made using preliminary protein test and Biuret protein method, and the estimation was done using Biuret and Kjeldahl protein method, the protein concentration in Biuret method was ascertained using the calibration curve. At the end of the study, it was found that the protein concentration using Biuret method was 5.49g/100g and using Kjeldahl method was 7.08+0.217g/100g. This study revealed that Kjeldahl method was the best method for protein estimation of Moringa oleifera seeds. Indicating that protein detected using Kjeldahl method is greater than the Biuret method. Also, high level of protein in Moringa oleifera seeds makes it a good source of nutrients for human consumption.
