dc.description.abstractABSTRACT The three samples A,B&C of watermelon seeds were analysed for its different properties such asphysico-chemicals and carbohydrates contents. The watermelon seed oil characteristics were evaluated to determine wheather this oil could be exploited as an edible. Watermelon seeds has been protected in hard cover which is to be removed for the seeds in products. The watermelon seeds has been revealed as light cream in colour and oval in shape. The pet. Ether extraction of watermelon seed produced the physico-chemical yields of saponification value of 150.99±0.68, 159.42±1.02 and 152.65±1.44 for samples A,B and C respectively. And that of iodine value is 8.08±0.61, 9.73±0.14 and 8.80±1.44 respectively. The peroxides value also were obtain to be 9.17±0.28, 9.56±0.15 and 9.71±0.37 for all samples respectively. The free fatty acids values were found to be 12.35±0.45, 12.31±0.56 and 11.20±1.71 respectively. It was also found that there is presence of barfoed, benedicts, bials and seliwanoffs in all the three samples. The quantitative carbohydrates contents was also found to be 1372.88±244.25, 366.79±455.99 and 104.57±1.972 for all the three samples A, B and C respectively.
