Abstract

ABSTRACT Acute malnutrition remains a major killer of children under five years of age, in Sub-Saharan Africa.The study was undertaken to formulate a high energy diet (HED) that can be used to treat or manage malnutrition. HED is a subset of therapeutic foods which are energy-dense, micronutrient-enriched, which are soft, crushable, or drinkable foods that can be directly given to patients. High energy diet formulated from locally made materials that can be gotten from any local areas.The ingredients used for formulation are sesame seeds, coconut, cashew nut and honey in the ratio 15:5:3:2. The food formulated was sesame cookie in a biscuit like form. The method as described by Association of Official Analytical Chemistry was used for general proximate composition of samples. The formulated, contained Ash (1.00±0.50), Moisture (4.5±0.50), Fiber (2.00±1.32), Crude protein (10.93±0.22), Lipid (16.60±1.32), Carbohydrate (66.93±0.66) and calculated energy of 1935KJ/100g. The formulated also contained minerals, which were tested using AAS method and gotten as: Magnesium (8.23±0.28), Iron (0.37±0.04), Zinc (0.05±0.01), Calcium (11.41±4.07), and Copper (0.032±0.03). The formulated food though lacking in some minerals still has the energy to manage malnutrition.
